The famous book by Prosper Montagné which alphabetically covers all aspects of French cooking. It is “a treasury of recipes and culinary knowledge”. It is also a history of cooking with sources ranging from “Rabelais to Brillat-Savarin, from a country farmhouse kitchen to the banquets of ancient Greece”.  This edition of the first English language version is from 1969. Published by Paul Hamlyn. Large heavy book, measuring 20 cm by 26 cm and 5.8 cm thick. Total of 1098 pages. Lots of black & white illustrations. The book is in excellent condition, green hardcover with gilded lettering on spine. It has its dust cover, which suffers a few tears around the edges, where it has been rubbed against by other books on the shelf. A must-have for your kitchen library.
